Kandis sugar, also known as rock sugar, is a hard candy made by cooling sugar syrup into crystals, sometimes around a stick or a piece of string. It can be made from different types of sugar - white granulated sugar, cane sugar, brown sugar.
Candy sugar is used to sweeten teas, desserts and even savory dishes. It is less sweet than a comparable volume of granulated white table sugar, making it an ideal mild sweetener for many drinks and foods. Some people believe that rock sugar is healthier than white granulated sugar. However, there is no scientific evidence to support that candy sugar has any distinct health benefits over granulated sugar.
